Living off the sea
This presentation explores the relationship between the Faroe Islands and the ocean, which has been a source of life and livelihood for their inhabitants for centuries, as well as the historical link between the islands and Spain through cod, which is one of the cornerstones of their fishing tradition.
Through three interpretations of cod at PAZ, the presentation will demonstrate various approaches to understanding and making the most of this product, from comprehensive use of the fish to fresh presentation and traditional preservation techniques such as drying and fermentation. It will also explore how this maritime legacy is kept alive and transformed into contemporary Faroese cuisine.
