Innovating as a network: new forms of culinary innovation

What transforms an idea into a culinary innovation? Innovation stems from knowledge, dialogue, experimentation and collaboration. However, it also requires spaces and networks that facilitate the sharing of knowledge, the identification of opportunities, and the development of new ideas.
Against this backdrop, the Basque Culinary Centre has established the Chefs Community for Innovation, which connects chefs from diverse backgrounds and cultures with students, researchers and businesses, encouraging them to explore new avenues for culinary innovation. The presentation will build on the work carried out within this network to trace the path from identifying trends and generating ideas to their development and application in different contexts. It will involve students from the faculty and researchers from the technology centre to demonstrate how shared knowledge can be transformed into products, projects and new culinary experiences.
