Guram Baghdoshvili takes us on a journey through three foods that have been essential to humankind since ancient times: wine, bread and honey. These are three ways of transforming natural sugars into products that have transcended their role as mere sustenance, becoming part of the culture, traditions and identity of different peoples instead.
From the perspective of Georgian gastronomy, one of the world's great wine cultures, the chef explores how these three elements have evolved through techniques and methods of fermentation and preservation, and how they remain present in contemporary cuisine. This is a look at the relationship between produce, territory, knowledge and memory, from the roots of tradition to the possibilities of today's cuisine.
