‘The True Routes of Cod’ is a round-table discussion featuring live cooking demonstrations which retrace the global journey of cod. It will be a journey through seas, ports, trade, migrations and cuisines, connecting regions from the North Atlantic to the Iberian Peninsula and Africa, and demonstrating how each culture has developed its own approach to understanding, preserving and cooking cod. It is more than just a gastronomic journey; it is also a global history of exchanges, cultural fusion and knowledge centred on a single product.
