The objective is obvious: to portray Valencia's Albufera through its most charismatic produce. This is the objective and the dream Valls has been wanting to demonstrate for some time now, as a chef who loves his native land and its fruits, bent on using cookery to take the flavour and essence of that corner of Valencia up to San Sebastián.
