Iván grew up in the kitchen at his parents' family restaurant business in Mocejón (Toledo), but although he was at first reluctant to continue the family saga, he eventually studied at the Toledo Catering School.

He has worked in the kitchen at a number of top restaurants such as El Bohío or El Celler de Can Roca, and is now a major name in national gastronomy. 

Iván Cerdeño, double-starred by the Michelin Guide and winner of the 2018 National Catering Innovation Award, has embarked upon a new phase at Cigarral del Ángel, where he interprets the cuisine of memory with deep roots in Toledo, its plantations, river banks and the mountains nearby.
