Borja Sierra

Chef at Granja Elena (Barcelona)

Born in Barcelona in 1980, he studied catering at the Sant Ignasi (ESHTSI) school aged 19. He worked for a year with the Arbelaitz family at Zuberoa, and slightly later at Matteo, also in Oiartzun. In 2003 he went back to the family business, Granja Elena, a restaurant that opened in 1974 and was always run by his father Abel Sierra and his mother Olga Calvo.

During all this time Granja Elena has become a small but powerful business, drawing in his siblings Patricia (sommelier) and Guillermo (floor manager).

Granja Elena has gradually gained recognition and prestige with awards, and most especially the respect of the tough, highly competitive profession that is catering.
