Post-Covid. Closure of Barcal, searching for a new future

The future of Colombian cuisine guided by the best breakthrough chef at Madrid Fusión-Bogotá 2019, Miguel Warren.

In the current circumstances in 2020 Miguel Warren decided to close down his restaurant, Barcal. This then, is the time to face the future, and to think and make decisions. Warren is determined to face up to new challenges with a clear idea in his mind: to establish closer links with local producers and the potential of his local area.

 

We’ll be discussing with him how to research to develop a new future for haute cuisine in Colombia.
