Joan Roca is a chef and, alongside his brothers Josep and Jordi Roca, the co-owner of El Celler de Can Roca*, located in Girona. Founded in 1986, the restaurant has held three Michelin stars since 2010 and was ranked number one in the world by The World's 50 Best Restaurants list in both 2013 and 2015. This accolade subsequently placed it in the 'Best of the Best' category.
Having trained at the Girona School of Hospitality and been involved in the family business from the outset — his parents have run the Can Roca restaurant in the Taialà neighbourhood since 1967 — Joan Roca has developed a cooking style based on technical research and the evolution of Catalan tradition. His contributions include techniques and tools applied to haute cuisine, such as low-temperature cooking using the ‘roner’ and culinary distillation using the ‘rotaval’.
Alongside his brothers, he leads various gastronomic projects, including Casa Cacao, Normal and Mas Marroch in Girona, as well as Rocambolesc, an ice cream parlour and confectionery brand created with Jordi Roca. Throughout his career, Joan Roca has received numerous accolades, including the National Gastronomy Award for Best Head Chef in 2000.
