Alexandre Couillon is a chef and the owner of La Marine in Noirmoutier, France, together with his wife, Céline. His career is deeply rooted in the island and its surroundings, both of which have shaped his approach to cooking.

Having spent part of his childhood in Africa, he developed a close relationship with nature and local produce. Upon returning to France, he attended catering college and completed his apprenticeship in various kitchens, acquiring the technical foundations of his craft.

At La Marine, Alexandre and Céline have established their own identity, focusing on local produce and respecting the seasons. Their precise and uncluttered cuisine places particular emphasis on seafood and produce from the island.

He has been recognised with three Michelin stars and a Michelin Green Star, cementing his status as one of the most outstanding French chefs of his generation.
