Mauro Colagreco

Colagreco has developed his own distinctive style, influenced by his grandparents’ vegetable garden in Argentina and his commitment to biodiversity and sustainability, in his interpretation of ingredients and the interplay of flavours.
Born in Argentina to Italian parents, Colagreco initially pursued a career in business before turning to cooking. Following training and employment at various Buenos Aires restaurants, he travelled to France to work in the kitchens of Bernard Loiseau, Alain Passard and Alain Ducasse. He eventually settled in Menton, where he opened Mirazur, the restaurant that established him as a leading figure in global gastronomy.
Just six months after opening, Mirazur was awarded the ‘Revelation of the Year’ prize by the Gault & Millau guide. Since then, Colagreco has received many accolades, including three Michelin stars and the title of World's Best Restaurant in The World's 50 Best Restaurants 2019. He has also been awarded the distinction of Chevalier des Arts et des Lettres in France. In 2022, he was appointed a UNESCO Goodwill Ambassador for Biodiversity.
Alongside Mirazur, Colagreco heads up an international group of gastronomic projects, including the GrandCœur brasserie in Paris, the sustainable burger restaurant Carne, the La Pecoranera pizzerias, the Mitron bakery outlets, and the Argentinian-inspired restaurant Casa Fuego. All of these projects are united by a shared philosophy of respect for produce, the local area, and nature.
