With the slogan ‘United Kulinary’, from 2 to 5 October San Sebastián Gastronomika Euskadi Basque Country 2022 will be showing that cuisine is alive and well outside London.
The slogan is a nod to gastronomy's ability to unite cultures beyond politics. The longest standing gastronomy congress will be showcasing the gastronomy panorama in a country that is still a great mystery outside its capital.In addition to talks by British chefs and a large force of UK journalists and merchants in the sector, there will be space for Spanish chefs operating in the UK to explain their experiences and the success of Spanish products among the British people.
Registration is now available for the 24th Gastronomika congress for a seat to follow the talks live, and take part in the other activities staged at the venue. This year also features the return of the auditorium in the exclusive tasting area for presentations by speakers on the main stage.
UK cuisine, which has historically been enriched through its relationship with Commonwealth countries such as India or Pakistan, along with contributions by French, Chinese, Italian and Turkish cuisine, continues to absorb cultural, culinary and technical influences from all over the world. ‘United Kulinary’ will be a meeting point for the new British cooking formats, receptive to the diversity of a philosophy of sharing and cooperating, with the cuisine of the Basque Country, represented at this year's San Sebastián Gastronomika Euskadi Basque Country by chefs such as Andoni L. Aduriz, Paulo Airaudo and Josean Alija; and other Spanish cookery such as that practised by Quique Dacosta, Ricard Camarena, Oriol Castro and Eduard Xatruch, Benito Gómez, Lucía Freitas, Nando Jubany, Begoña Rodrigo and Albert Adrià.
But also for many other international cookery formats, such as that of another leading light in gastronomy, Gastón Acurio, the Peruvian chef who persuaded an entire country that gastronomy was the instrument that would help them retrieve their pride and identity, lighting the fuse that would throw Latin American cuisine into the challenge of new times. Or the cooking of Pablo Rivero, the Argentinian chef who succeeded in turning a modest local grill in Buenos Aires into the best restaurant in all of Latin America on the 2020 World’s 50 Best Restaurants list. Rivero, held to be Latin America's best grill master, will form part of the group of chefs featured in the San Sebastián grill symposium to demonstrate the magic of flames and his particular observance and understanding of the relationship of cookery with fire, the ultimate symbol of cookery given its ability to transform foodstuffs.
The 24th Gastronomika will also feature Spanish chefs and entrepreneurs who in the last 20 years have taken their cuisine to conquer the United Kingdom, opening outlets that have made them must-eats for British diners. Chefs such as José Pizarro, an ambassador of Spanish cuisine in the UK, who has lived in London for more than 20 years; Nieves Barragán or Quique Dacosta and Nacho Manzano, who run their own businesses on British soil and have made London, Europe's most international and universal capital, home to the largest number of top-notch Spanish restaurants in the world. Projects that further the image of Spanish gastronomy and boost the commercial and tourist links that have always been in place between the Iberian Peninsula and the United Kingdom.
San Sebastian Gastronomika Euskadi Basque Country became the world's first International Gastronomy Congress 23 years ago. Its goals are to boost culinary state-of-the-art and gastronomic knowledge, and showcase trends and processes of change in haute cuisine. The 24th Gastronomika will also be the venue for the National Russian Salad Championship, the Chickpea Cuisine Championship, and the Grill Championship.
